Hubby was browsing some recipes in the web again and printed some pages. He wants me to try 4 new recipes with egg and chicken. The ingredients looked expensive but I guess he was tired of taking with him his same old, same old packed lunch.
I first tried the Chicken with Spring Onions and Sour Cream. The fillet chicken was cooked in a small amount of butter, then comes the diced spring onions and sour cream. It was just okay at first but the taste grows on you until you find the craving for it.
My honey, coming home from work said he liked it. A plus point for me for my husband’s appreciation.
After failing on my attempt to make a tasty aglio olio, I have a lot of basil leaves stored. What am I to do? Still some chicken left though.
Time to improvise. I love how it came about….
Basil Chicken

Ingredients:
½ kilo chicken breast fillet – halves
1 cup minced basil leaves
1 cup minced green/spring onions
2 tbsp. butter
Onion powder
Garlic powder
Salt & pepper
Directions:
- Marinate the chicken breast fillet with onion powder, garlic powder, salt & pepper.
- Stir fry the chicken with butter in a non-stick pan for about 5-10 minutes.
- Add the spring onions and basil leaves.
- Gently mix the spring onions and basil leaves until chicken is well done.
- Best served when hot!
I call it Basil Chicken because it taste so much like Pesto. My firstborn son coined the word Pesto Chicken but I told him that there’s really a recipe called Pesto Chicken. My kids love Pesto and every time they smell basil, they remember my good old pesto recipe. One of their favorites!
Well, as long as my chance recipe works for them, I’m happy!
